I’m always so proud of myself for cooking healthy/hearty food, instead of crappy frozen meals or fast food (it’s the little victories). So I’d thought I’d start posting a weekly recap of the best eats each week.
Simple Pancakes & Bacon

Whole Wheat English Muffin with Peanut Butter & Orange Juice (this is my morning staple)
Chocolate Cherry Spinach Smoothie (I do this nearly everyday for lunch. It’s fast, healthy, and filling. It has 2 servings of fruit, and 2-3 servings of veggies, plus lots of protein)
Mahi Mahi, Brown Rice, Roasted Parmesan Tomatoes. These tomatoes were amazing, so flavorful, and very simple.
